Gluten Free Sourdough Bread

These are the cupcake pan rolls.



These were made in a roll pan.


I started the sourdough starter several days ago and today it is time to make the rolls for Easter dinner. I have not tried this before so it is an adventure. I had to sample one as it came out of the oven and I have to say there is no "sourdough" taste. :( I was hoping for that. But they are very good none the less and will easily be eaten by all. So I will be on the hunt for a sourdough recipe again.


Gluten Free Sourdough Bread

Dry Ingredients
2 C White Rice Flour
2/3 C Potato Starch
1/3 C Tapioca flour (aka starch)
1/2 C Dry Milk Powder (I used coconut milk powder)
3 1/2 tsp Xanthan Gum
1 1/2 tsp Celtic Sea Salt

Wet Ingredients
3 Eggs
3/4 C Sourdough Starter
1 C Warm Water
3/4 C Ricotta Cheese (I had to use cottage cheese as it was the only thing in the house)
1/4 C Honey
1/4 C Vegetable Oil (I used my coconut ghee oil)
1 tsp Cider vinegar

Add all dry ingredients in a bowl and mix well. With a mixer on low speed slowly add the wet ingredients until blended. Beat 10 mins.

Place dough in greased bread pans and allow to rise for 1 hour. ( put the dough into a dinner roll pan and muffin pan for rolls).

Bake at 375 degrees for 30-60 mins. Use a toothpick to check for "doneness".

Stephanie, you are a sweetheart! I wrote up my blog's post for tomorrow this morning, and have the exact same scripture in it. :) He is Risen Indeed! :)
My sourdough start is, well, still getting sourer. hehe. Haven't used it yet. But now you have me interested...what is a roll pan? Those rolls look like REAL rolls. Sorry to hear that they aren't quite what you were looking for, they do look fantastic though. I'm still too chicken to try. :) Hope you and your family have a wonderful Easter!

I too have been on a hunt for gluten free sourdough. I have found a pretty exciting starter enhancer, kefir (related to a yogurt kind of thing). The sourdough has a definite sour taste. If you're interested in checking out my recipe it's at greenxngfmom.blogspot.com. I haven't yet posted exact measurements because I haven't yet measured exact ones.
