Chocolate Zucchini Muffins



Chocolate Zucchini Muffins

I decided to try a new twist to my already popular Chocolate Muffins . In an effort to sneak some veggies in my kids I replaced the cup of applesauce with a cup of shredded (food processor) zucchini. These turned out so good. They are light and fluffy. My kids got them in their lunches so I don't know what their verdict is yet but it is a thumbs up for me.

I made these last night and got 15 muffins from the recipe. There are seven left and only two adults and two toddlers in our family - does that tell you how good these are??? The changes I made were:
1)No cinnamon - it makes DS hyper as all get out, makes my heart race, and makes DD puke. That said, I love cinnamon but just don't use it very often.
2)Maple syrup (the REAL stuff) in place of the agave nectar.
3)I also used canola oil instead of the coconut oil and also added about half a bag of Enjoy Life mini chocolate chips.
These are really moist and super yummy. I can tell they do not have a very high glycemic index because I was able to eat one for breakfast on an empty stomach without getting a headache (from sugar overload) afterwards.
